Lafayette is often called the capital of Acadiana,
that part of south Louisiana settled in the late eighteenth century by
French-descended refugees fleeing British rule in Canada. Today's "Cajun"
culture is known for music, cuisine, and joie de vivre. Crawfish (like
the one behind bars in the picture) are among the region’s most
popular foods.
